Beet root salad



La première fois que j’ai goûté cette salade, c’était dans un bar de New York City au sud de Soho avec Lorette. J’étais descendue en fin de journée en bus d’Albany au retour du Mexique (merci Laurent de prendre les enfants en charge) et nous nous retrouvions après que Lorette avait visité NYC par elle-même depuis trois jours. Ca c’était la théorie. En fait, son hôtel bon marché avait été fermé par les autorités sanitaires, elle avait donc trouvé porte close le soir de son arrivée.
Seule avec son sac à dos, il est tard (très tard d’un point de vue français), il fait froid… heureusement, le numéro de téléphone de Nicolas traine dans un mail récent, il était là. Elle a donc trouvé un hébergement, une famille, un super accueil et une escorte pour sa découverte de Big Apple. C’est donc toutes les deux fatiguées que nous sommes parties à la recherche d’un morceau à grignoter vers 10pm. Nous sommes entrées dans le premier bistrot rencontré et j’ai commandé la « Beet salad » (c’est là qu’on constate à quel point on mûrit, je suis désormais capable de manger des betteraves rouges sans que Maman ne me force…). C’est devenu mon classique, pas tant pour les betteraves que pour les candied pecans qui la recouvre cependant !!! La vraie révélation, c’est Kate qui en est à l’origine : elle sait faire les candied pecans (bon ceci dit, Kate sait tout faire) elle-même donc je peux reproduire la salade si je parviens à faire des candied pecans. La suite, plus technique :
Ingredients:
-          Arugula (roquette) if you don’t find some any salad from the season will work. You need as much as to cover the plates you’re going to use
-          Diced beet roots (sometimes canned ones are sweet and tasty)
-          ½ cup candied pecans
-          ½ cup of crumbled fresh but not too much goat cheese (the texture of feta cheese is what you’re looking for)
Dressing: you’re looking for something thick and ideally looking like some kind of caramel. A basic olive oil and vinegar can be used as a fast solution. Here is something fancier.
-          ½  cup balsamic vinegar
Boil the vinegar on medium heat until reduced to ¼ cup: it will thicken a lot a be sweeter. Then top the salad with the vinegar syrup.

Candied pecans



La salade de betteraves rouges avait quelque chose d’unique… en fait, c’étaient les noix de pecans caramélisées sur le dessous. Croquantes à l’extérieur, moelleuses à l’intérieur, sucrées (parfait pour les betteraves), limite addictives, je reprendrais bien une salade, moi !!
Des candied pecans, j’en ai trouvé au supermarché, c’est moins bon. Zut de zut !!! Sauf qu’un soir, Kate m’a demandé ce qu’elle amenait pour le dîner : « tes baguettes, c’est le meilleur pain de New York State ! ». Elle est effectivement venue avec ses baguettes mais aussi avec une petite boîte de home made candied pecans !! Yes, quel signe d’espoir (le premier qui dit que j’en fais trop, exagère à peine) : c’est donc possible de les faire soi-même. Quelques pages internet et quelques essais plus tard, voici la recette (alors autant la salade de betteraves peut être discutée, autant celle des candied pecans a toujours été reçue par un « wouah, c’est bon ça !! »)

Candied pecans
Ingredients: the amount you’re going to make depends on how much you can eat (or from another prospective on how reasonable you are: can you stop eating pecans without finishing the bowl???)
-          1 cup sugar
-          2Tb sp water
-          3 cups pecans
-          Flavoring: sea salt, ground cinnamon, spices (cayenne pepper, pimenton (paprika)…)

Preheat the oven at 165°C
Turn the sugar into syrup: bring the sugar and water in a sauce pan on medium heat until the sugar has dissolved. Let it simmer for 2-3min. Then pour in the pecans and toss them with the melted sugar. Once covered with sugar, line the pecans on a parchment paper sheet in the oven (onto your oven baking sheet). Try to avoid superimposing layers. Stir them every 5min with a fork. At one point the sugar will crystallize and will make a dry coating around the toasted pecans. Keep them for 20 to 25min in the oven. Let them cool down on a rack before storing them in a metallic box.

Moitié en anglais, moitié en français. Ca se passe dans une famille française en vacances dans le Nord-est des Etats-Unis.



Un souvenir du restaurant “The view” à Lake Placid, une vue sur le lac, une lumière tamisée, des arbres de Noel illuminés en extérieur, un bar au comptoir de bois et hauts tabourets et des enfants qui jouent aux échecs pendant que nous savourons Vesper et Manhattan. J’avais commandé le « special » : fish stew with root vegetables. Enorme ! Des légumes fondants mais qui se tiennent, des morceaux de poissons fermes et une sauce riche en saveur, oncteuse et subtilement parfumée. Voilà ce que j’ai pu inventer à partir des sensations de ce soir là.

Root vegetables and sea food stew
The proportions can be adapted to taste. What really matters is to respect the way the veggies are cooked. You will need a big pot (crockpot will do it): the old cast one from your grandma or the more modern version cocotte-minute will be perfect.
Preparation: ½ h, cooking:1 ½ h
Ingredients:

  • 3 Tbl sp. of olive oil
  • One or two chopped onions: you want as much as to cover the bottom of your pot

  •  Root vegetables diced (2x2cm²): parnsips (panais), carrots, turnips (navets), potatoes (firm potatoes, they can be of different colors). That’s all I tried so far, depending on your taste you could also go with sunchokes or Jerusalem artichokes (topinambours)
  • Water to just cover the vegetables

  • 1 cup of tomato puree 
  •   1 ½ glass of Lillet 
  •   Fish: any firm fish will work of course swordfish will be delicious but salmon and cod can perfectly make up for more expensive fish. Proportions depends on the final results, I personnaly call it a root vegetables stew so the fish is not the main part of the recipe, I would count roughly 100g of fish per adult
  • Shrimps: not in the original recipe but a tasty add-on if you know where to find tasty shrimps (3-4 per adult) 
  • 1 cup of sour cream (can be more if you like it very fat and creamy, can also be decreased down to 2 Tb spoons to have a lighter sauce) 
  •  Parsley to top the plates (for a more subtil taste chervil will be a good choice)

Bake the onions in olive oil in the pot over medium heat until they are soft and translucide. In the meantine wash and dice the root vegetables in big chunks and throw them in the pot over the onions. Stir them in the oil for 2 minutes and then cover the with some water. The water should be at the same level as the vegetables. Then add the tomato puree, Lillet and let simmer with the lid for one hour (can be more if you’re not ready to serve your dish). ½ before you’re ready to eat top the vegetables with the fish also cut in big chunks and let it cook slowly with the lid on top. When you are ready to serve, add the sour cream and stir very carefully to preserve the chunks. If the sauce isnot thick enough, you might want to add 1 Tb spoon of corn starch (maizena) when adding the sour cream. After having served the plates, top them with parsley or chervil sprig.
 Another longer but better way to incorporate the fish is to cook it in a pan until slightly golden and then add it on top of the vegetables.

La nouvelle année et ses résolutions

Pas besoin de s'étendre sur le sujet, le titre est suffisamment évocateur pour que cela renvoit à quelque chose que nous avons tous expérimenté.
De mon côté pour cette année, j'ai décidé de conserver des traces de mes impressions. Rien de tel que documenter. Du coup, le blog va avoir une nouvelle rubrique : recettes. Techniquement, elle servira  à les partager et puis aussi à me souvenir.

Balade dominicale

Promenade au cœur de pays Nantais, nous sommes paumés, loin de tout et pourtant on croise pas mal de monde à la butte de la Roche.
- Toinou : "Moi, je sais pourquoi il y a plein de monde aujourd'hui"
- nous : "????"
- Toinou : "c'est parce qu'il pleut toujours". Sous entendu, comme aujourd'hui, pour une fois, il fait beau tout le monde en profite !!!
En tous cas, c'était vraiment beau.

Les recettes du réveillon
